Choose a pineapple that is plump and slightly soft to the touch. The stem end should have a sweet aroma. Fresh, deep green leaves are a good sign. Store whole ripe fruit in the fridge for up to 3 days. Once cut, tightly sealed pineapple can remain in the fridge for 3 more days. &lt;br /&gt;&lt;br /&gt;So let's get cutting.&amp;nbsp; &lt;br /&gt;&lt;br /&gt;First, cut off the top and bottom ends...&lt;br /&gt;&lt;div class="separator" style="clear: both; (I didn't do this...so no pics!) &lt;br /&gt;&lt;br /&gt;Next step is to get rid of the core.&amp;nbsp; I have an apple corer that works beautifully and highly recommend this tool as a kitchen staple...&lt;br /&gt;&lt;div class="separator" style="clear: both; (if you did not have a corer, then after slicing into rings, cut out the core with a knife from each individual ring.&amp;nbsp; However...this reminds me why I was so intimidated by the thought of using fresh pineapple all those years...so I recommend the apple corer.&amp;nbsp; Just do it...pick one up the next time you are at the store *wink*) &lt;br /&gt;&lt;br /&gt;As for fresh pineapple rings, my favorite use is to throw them on the grill for a side dish or dessert! &lt;br /&gt;&lt;div class="separator" style="clear: both; Toss these over a bowl of vanilla ice cream and let the moaning begin.&amp;nbsp; Yah...that good!&amp;nbsp; &lt;br /&gt;&lt;br /&gt;But let's not forget that pineapple is often needed in chunks, so back to our pineapple cutting lesson!&lt;br /&gt;&lt;br /&gt;If you don't want rings, cut the pineapple in half, then half that and then half that (half/ quarter/ eighth), like this....&lt;br /&gt;&lt;div class="separator" style="clear: both; text-align: center;"&gt;&lt;a href="http://2.bp.blogspot.com/_WfnSF-GL6sk/S9-TfJ3MvDI/AAAAAAAABPo/ROy-5HN4pDw/s1600/quarter+pineapple+compressed.jpg" imageanchor="1" style="clear: left; cssfloat: left; Just as in the rings, you can slice the core off by running the knife down the inside of the quartered or eighthed sections)&lt;br /&gt;&lt;br /&gt;Many times, I just need a portion of the pineapple, so I will store the remainder in the largest portions possible to give me flexibility to cut it a different way for another day.&amp;nbsp; My solution...&lt;br /&gt;&lt;br /&gt;Steam them!&amp;nbsp; In about 15 minutes, I can have warm mashed sweet potatoes on the table with any entree I want to pair them with.&amp;nbsp; &lt;br /&gt;&lt;br /&gt;Wash and peel your potatoes and then dice them into small cubes (the larger they are, the longer they take to get tender...so make them about an inch or smaller in size)&lt;br /&gt;&lt;div class="separator" style="clear: both; Fill the basket with 5 pounds of ground beef. This will create steam that will cook the meat in the baskets. Stir the meat occasionally until it is no longer pink in the middle. The more you stir it, the more fine the ground beef will break up. When the meat is no longer pink, it is done. Divide it into 1 pound portions and place in quart sized freezer bags. Not anymore! Here is a great tip I learned from the Rachel Ray Show. &lt;br /&gt;&lt;br /&gt;You will need 2 plastic lids of the same size.
